If you want to improve your health, the first place to start is to increase your intake of green vegetables. They are without a doubt the primary food group lacking in most people’s diets (okay I know that technically green vegetables are not classified as a food group of their own, but they really should be…they are that important). When I say this to people, invariably they tell me they eat lots of green vegetables already, but I suspect this is not really the case. I’m so glad this isn’t the 1950’s. If it were, I wouldn’t have nearly the amount of opportunities I have today as a woman in our society. I wouldn’t have the privilege of juggling being both a wife and mother and pursuing a rewarding career. I wouldn’t be setting my alarm for 5am so I can check emails and get a couple of hours of work in before the kids wake up and need to be fed and prodded along so they can get to school on time, homemade lunch in hand. It usually strikes around 10am and 4pm and then again in the evening. Perhaps it’s feelings of sluggishness or irritability, maybe the shakes set in or you feel like you are going to fall asleep at the wheel of the car. A boost is in order, so you turn to a mid-morning donut and coffee, late afternoon chips and soda, or a late night bowl of Haagan- Dazs Chocolate Fudge Brownie ice cream for relief. The logical side of your brain says “no don’t do it…grab the celery”, but the addict within you says “just go for it…it’ll make you feel better”.
In actuality, those little sugar (and caffeine) highs just set you up for a big fall a couple hours later. One of the things I love about raw foods is the creativity it allows you in the kitchen. When you eat more raw foods, your taste buds “wake up”; they get anesthetized from too much sugar and processed foods. I literally threw this together based on what I had on hand in the refrigerator and pantry and it is amazing! This salad has a nicely balanced mix of sweet, tart, and crunch. The dressing is from Alissa Cohen’s book Living on Live Foods. I highly recommend her book for simple, flavorful raw foods creations that won’t have you stuck in the kitchen for hours on end.
