Recipe: Summer Peach Cobbler 0

Posted on August 20, 2010 by Carol

A ripe summer peach is nature at perfection.  I could eat about 6 in one sitting and still look forward to more the next day.  Although my favorite way to eat peaches is in the unaltered form right off the tree, I buy a whole bunch of extras when they are in season to turn into incredible desserts.  We made a peach cobbler in our raw foods desserts class this past week, which was quite tasty, but afterwards, I decided to experiment with a different crust and topping and according to my kids, this recipe rocks! The original Read the rest of this entry →

What to do with excess zucchini 1

Posted on July 22, 2010 by Carol

I’m certainly not complaining about a bountiful garden.  There will come a time in the not too distant future when the ground is cold and barren and I am missing my forays into the vegetable garden to see what is ready to be picked.  This year, partly due to poor planning on my part and partly due to the high temperatures we have experienced here in the Northeast, I have an excessive amount of zucchini…more than my family could possibly eat.  I’ve grilled it, Read the rest of this entry →

Blueberry Pineapple Juice 1

Posted on July 19, 2010 by Carol

It’s that time of year again….the weather is beautiful, the kids are home from school, the work is piling up, the to-do list is growing exponentially, and the social calendar is overflowing.  The lazy, fun-filled days of summer tend to be accompanied by a variety of foods I typically avoid and evenings getting to bed much later than I’d like.  It’s a fun time of year for sure, but I have been starting to feel the effects of all the hoopla both physically and emotionally, so I decided this week to take a break and do a bit of cleansing…a week of only raw foods and live juices plus my daily yoga and meditation with the goal of cleansing and re-vitalizing both my mind and body.

I thought I would share this juice recipe with my readers to entice you to join me!  This recipe is from the book The Seven Day Total Cleanse by Mary McGuire-Wien.  I highly recommend this book;  it’s chock full of great blends of tasty juices.  Not only does it taste great, but it is Read the rest of this entry →

Recipe: Raw Corn Salad 2

Posted on July 01, 2010 by Carol

Once you have tasted how sweet corn is in its raw, natural state, you will wonder why anyone bothers to cook it.  The kernels have such a sweet taste; just cut them off the cob with a sharp knife and toss them over your favorite green salad to add a wonderful sweetness to your greens or try this flavorful mixture of corn and cherry tomatoes… Read the rest of this entry →

Raw Vegan Catering Event…Success! 8

Posted on June 22, 2010 by Carol

Somehow we managed to pull it off.  Round the clock prepping, list making, list checking, a few mini-meltdowns and plenty of support resulted in a seamlessly run evening enjoyed by all.  The food received rave reviews from carnivores and vegans alike.  It certainly helped to have Marti Wolfson, a natural foods chef who graduated from the Natural Gourmet Institute and Eve Boutin, caterer extraordinaire, running the kitchen and taking care of everything happening  behind the scenes. Nobody was told ahead of time that the entire menu would be raw vegan.  They were just invited to come to a surprise 40th birthday party for a dear friend, who happens to enjoy raw vegan food.  The secret came out after guests began to inquire Read the rest of this entry →

Tuscan kale caesar salad 1

Posted on June 01, 2010 by Carol

Whether you are a kale lover or not, I guarantee that you will love this salad!   I was wandering around Union Square one day, lost in my thoughts until my nose led me to straight to The Kitchenista’s booth.  Alissa, the owner of The Kitchenista, was busily preparing an incredibly fragrant raw kale caesar salad.  One taste and I knew I just had to have the recipe. Alissa very kindly offered to email it to me and now has it listed on her blog as Read the rest of this entry →

Recipe: raw chocolate coconut truffles 1

Posted on May 12, 2010 by Carol

Anytime I find a recipe that’s easy, delicious and nutritious, I want everyone to know about it.  When trying to improve childrens’ diets, the best place to start is by replacing junkie snacks with healthy ones.  This is a recipe from RAWvolution by Matt Amsden.  It takes literally minutes to make and will satisfy your chocolate cravings.  I put the balls in the kids lunchboxes;  they think they’re getting a special treat and I’m Read the rest of this entry →

Raw juicing book review 16

Posted on February 10, 2010 by Carol

raw juiceSo I’m back. You didn’t really think I could stay away from this blog for too long did you? I have truly missed writing the articles, so the posts may be infrequent and sporadic, but they will be here when inspiration strikes.

I’ve had quite a few weeks since the holiday madness relinquished it’s control over my life to unwind, relax, and enjoy some much needed downtime. (Although coaching our kids’ basketball teams and racing from one after school activity to another isn’t exactly downtime, it’s less busy than it had been for a few months.)

One of the things I have been enjoying the most during these cold winter months is reacquainting myself with my juicer. I’ve been giving it quite a workout of late. Juicing isn’t something I usually associate with the cold winter months; I’m more of a Read the rest of this entry →

Time to buy a dehydrator? 5

Posted on August 13, 2009 by Carol

home dried apples

Has the bounty of your summer garden gotten out of control?  Over zealous with your tomato plants this year?  If you can’t possibly think of one more way to prepare your surplus veggie or fruit (for me it’s zucchini…it seems to be multiplying daily), perhaps it is time to invest in a dehydrator. Coconut Water: Nature’s Gatorade 42

Posted on August 07, 2009 by Carol

istock_000001881415xsmall

I cringe whenever I see athletes gulping down Gatorade or any of the other so called sports drinks that are on the market. (And don’t get me started about how obsessed kids are with all these well marketed drinks). I do understand that sometimes you need something with a little extra zing in it when you are working out that plain water doesn’t provide, but with all of the Read the rest of this entry →
