A ripe summer peach is nature at perfection. I could eat about 6 in one sitting and still look forward to more the next day. Although my favorite way to eat peaches is in the unaltered form right off the tree, I buy a whole bunch of extras when they are in season to turn into incredible desserts. We made a peach cobbler in our raw foods desserts class this past week, which was quite tasty, but afterwards, I decided to experiment with a different crust and topping and according to my kids, this recipe rocks! The original Read the rest of this entry →

Summer corn is one of my favorite harvests of the year! I could eat it everyday and never tire of it. I can across this recipe at the fabulous Union Square Farmers Market last week when I was in New York. It’s incredibly simple and quick to prepare. The spices make this dish explode with flavor. Definitely a keeper! Read the rest of this entry →

I’m certainly not complaining about a bountiful garden. There will come a time in the not too distant future when the ground is cold and barren and I am missing my forays into the vegetable garden to see what is ready to be picked. This year, partly due to poor planning on my part and partly due to the high temperatures we have experienced here in the Northeast, I have an excessive amount of zucchini…more than my family could possibly eat. I’ve grilled it, Read the rest of this entry →

It’s that time of year again….the weather is beautiful, the kids are home from school, the work is piling up, the to-do list is growing exponentially, and the social calendar is overflowing. The lazy, fun-filled days of summer tend to be accompanied by a variety of foods I typically avoid and evenings getting to bed much later than I’d like. It’s a fun time of year for sure, but I have been starting to feel the effects of all the hoopla both physically and emotionally, so I decided this week to take a break and do a bit of cleansing…a week of only raw foods and live juices plus my daily yoga and meditation with the goal of cleansing and re-vitalizing both my mind and body.
I thought I would share this juice recipe with my readers to entice you to join me! This recipe is from the book The Seven Day Total Cleanse by Mary McGuire-Wien. I highly recommend this book; it’s chock full of great blends of tasty juices. Not only does it taste great, but it is Read the rest of this entry →

Once you have tasted how sweet corn is in its raw, natural state, you will wonder why anyone bothers to cook it. The kernels have such a sweet taste; just cut them off the cob with a sharp knife and toss them over your favorite green salad to add a wonderful sweetness to your greens or try this flavorful mixture of corn and cherry tomatoes…

This recipe screams summer! It’s the perfect dish to bring to a summer barbeque as a healthier twist to traditional potato salad. The fresh dill complements the sweet flavor of the potatoes perfectly, making this colorful salad a sure hit.
Ingredients:
4-5 sweet potatoes, chopped into 1 inch cubes
3-4 T. fresh dill, minced
¼ cup olive oil
1/3 cup white vinegar
2 T. Dijon mustard
1 T. Kosher sea salt
¼ cup Vegannaise
Directions:
Place the chopped sweet potatoes into pot of water, bring to boil and cook until tender. Remove from heat and drain. Place in large mixing bowl. In separate medium size bowl combine remaining ingredients and whisk. Add sauce to the potatoes and gently stir together to coat. Take care not to overmix and break apart the potatoes. Can serve warm or chilled.
Serves 6-8 as side dish

If you have never tried Mochi, you are in for a treat. Mochi is a traditional Japanese food made from a special short-grain sweet brown rice. The rice is steamed and then pounded and crushed into the version you can find in a health food store. When it is baked or pan-fried, it puffs up into a moist, chewy muffin-like treat with a crispy crust…perfect for Read the rest of this entry →

Whether you are a kale lover or not, I guarantee that you will love this salad! I was wandering around Union Square one day, lost in my thoughts until my nose led me to straight to The Kitchenista’s booth. Alissa, the owner of The Kitchenista, was busily preparing an incredibly fragrant raw kale caesar salad. One taste and I knew I just had to have the recipe. Alissa very kindly offered to email it to me and now has it listed on her blog as Read the rest of this entry →
